  • 2 lbs lean ground beef
  • 1 small onion, finely chopped
  • 12 jalapeños, finely diced (seeds removed for less heat)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup barbecue sauce
  • 1/2 cup ranch dressing
  • 2 tbsp sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, smoked paprika, garlic powder, salt, and pepper until just mixed.
  3. In a separate bowl, mix cream cheese, cheddar cheese, and diced jalapeños until combined.
  4. Flatten the meat mixture on parchment into a rectangle. Spread the cheese mixture on top and roll it into a loaf shape.
  5. Place seam-side down in the prepared pan and brush with barbecue sauce.
  6. Bake for 60–70 minutes or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
