- 2 lbs lean ground beef
- 1 small onion, finely chopped
- 1–2 jalapeños, finely diced (seeds removed for less heat)
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1 large egg, beaten
- 1/4 cup barbecue sauce
- 1/2 cup ranch dressing
- 2 tbsp sour cream
Instructions
- Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, smoked paprika, garlic powder, salt, and pepper until just mixed.
- In a separate bowl, mix cream cheese, cheddar cheese, and diced jalapeños until combined.
- Flatten the meat mixture on parchment into a rectangle. Spread the cheese mixture on top and roll it into a loaf shape.
- Place seam-side down in the prepared pan and brush with barbecue sauce.
- Bake for 60–70 minutes or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
