- 1 red bell pepper (diced)
- 1 cup frozen corn (thawed)
- 1 can black beans (15 oz.), drained and rinsed
- 1 cup sour cream
- 4 ounces cream cheese (softened and cubed)
- 1 tablespoon lime juice
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 6–8 large wraps or tortillas
Instructions
- In a skillet over medium heat, warm olive oil and add the shredded chicken, cumin, chili powder, garlic, jalapeno, and bell pepper. Cook for about 5 minutes.
- Stir in thawed corn and black beans along with cream cheese, sour cream, and lime juice until well combined and heated through.
- Divide the mixture among tortillas. Roll tightly to enclose the filling.
