  • 4 boneless, skinless chicken breasts
  • 4 oz. cream cheese, softened
  • â…“ cup shredded parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 2 cups baby spinach, chopped
  • 2 cloves garlic, pressed
  • 1 ½ Tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp freshly cracked black pepper
  • ¼ tsp salt
  • â…› tsp garlic powder
  • â…› tsp red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cream cheese, parmesan, mozzarella, spinach, garlic, salt, garlic powder, and red pepper flakes until well blended.
  3. Mix together Italian seasoning, salt, garlic powder, paprika, and black pepper in a separate bowl.
  4. On a cutting board, create a pocket in each chicken breast by slicing it sideways without cutting all the way through. Rub olive oil over both sides and season with spice mixture.
  5. Stuff each breast with the spinach filling evenly.
  6. Place stuffed breasts in a baking dish and bake uncovered for 25–30 minutes or until internal temperature reaches 165°F (74°C).
  7. Let rest for a few minutes before serving.
