Ingredients
- 1–2 hearts of romaine (shredded)
- handful radicchio (shredded)
- ½–1 cup chickpeas or plant protein of choice
- handful cherry tomatoes (halved)
- ½ large cucumber (diced)
- â…“ red onion (minced)
- handful olives (pitted and sliced)
- pepperoncini (or any pepper thinly sliced)
- 2 tbsp tahini or cashew butter
- 2 tsp lemon juice
- 1/2 tsp maple syrup
- 3 tbsp apple cider vinegar
- 2 tsp Italian seasoning
- 1/2–1 tsp garlic powder
- 1/2–1 tsp onion powder
- water as needed
- salt and pepper to taste
- optional red pepper flakes
Instructions
- Prepare the salad by shredding romaine and radicchio, halving cherry tomatoes, dicing cucumber, mincing red onion, and slicing olives and pepperoncini.
- In a separate bowl, mix tahini, lemon juice, maple syrup, apple cider vinegar, Italian seasoning, garlic powder, onion powder, and water to achieve your desired dressing consistency. Season with salt and pepper to taste.
- Combine all salad ingredients in a large mixing bowl. Drizzle with dressing as preferred. Serve immediately or chill briefly before enjoying.
