  • 3 lb beef shoulder (cut into 3-inch pieces)
  • 2 tablespoons olive or avocado oil
  • 6 cloves garlic (roughly chopped)
  • 1 medium white onion (cut into large chunks)
  • 1/3 cup fresh orange juice (about 1 large orange)
  • 1/3 cup fresh lime juice (about 2 limes)
  • 1 cup chicken broth
  • 2 teaspoons kosher salt (divided)
  • 2 teaspoons dried oregano
  • 3 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. Combine spices and rub all over the beef.
  2. Sear beef in the Instant Pot until browned; set aside.
  3. Sauté onions and garlic in the same pot until fragrant.
  4. Return beef to the pot; add juices, broth, and bay leaves.
  5. Pressure cook on high for 55 minutes; let pressure release naturally for 10 minutes.
  6. Broil shredded beef on a sheet pan for 3-5 minutes until crispy.
